Golden Buttermilk Pancakes


2 cups all-purpose flour⠀

3 Tablespoons sugar⠀

1-½ teaspoons baking powder⠀

1-½ teaspoons baking soda⠀

1-¼ teaspoons kosher salt⠀

2-½ cups buttermilk (or 2-1/2 cups Green Field Farms whole milk combined with 2-1/2 Tablespoons vinegar)⠀

2 Green Field Farms eggs⠀

3 Tablespoons butter, melted⠀


With a wire whisk, mix together flour, sugar, baking powder, soda and salt. Make a well in the center of the flour mixture and add the buttermilk, eggs and melted butter. Stir together with wire whisk, just until combined. Batter will be thick and slightly lumpy! Allow batter to set for 15-20 minutes and then fry pancakes in skillet over medium heat in butter & a splash of vegetable oil.


Fruit topping:

1/2 cup water

1 Tablespoon clear jel or corn starch

½ cup pure Green Field Farms maple syrup

1 teaspoon raspberry jello

3/4 cup red raspberries

¾ cup strawberries

¾ cup blueberries

1 Tablespoon fresh lemon juice


Stir clear jel into water and place over medium heat, stirring constantly. Add maple syrup and raspberry jello and heat. Add fruits and lemon juice and heat until simmering but do not boil.
