This baked omelet casserole is an easy and delicious option for the breakfast table. 

Ingredients:

  • 3 slices of crustless bread broken into pieces
  • 3 eggs beaten
  • 1 cup of whole milk
  • ½ tsp. ground mustard
  • ½ tsp. salt
  • 1/8 cup diced tomatoes
  • 1/8 cup of diced peppers
  • 1/8 cup of mushrooms

Garnish:

  • Cheddar cheese
  • Spinach

Directions:

In an 8×8 inch pan cover the bottom of your pan with your bread. Set aside. In a medium-sized bowl beat your eggs and milk together, and add your remaining ingredients.
Pour over your bread and mix. Add cheese and spinach to the top and bake at 350* for 35-40 minutes. Serve & Enjoy!
